Good evening loyal followers and occasional lurkers!
Tonight I wanted to share my recipe for another wallet-friendly dinner idea. Honestly, I didn't feel like cooking something extravagant, but wanted something just as tasty. Here it is!
Veggie Chicken Biscuits
(Serves 8... or 4 very hungry people)
Items needed:
1 can of Pillsbury homestyle biscuits
olive oil
shredded cheese (whichever kind you like; tonight I used the three cheese blend)
2 medium sized bell peppers (preferably different colors for presentation purposes)
minced garlic
1 small white onion
2 medium sized chicken breasts
salt
pepper
paprika
Directions:
Turn the oven to the temperature indicated on the biscuits and let it preheat. Meanwhile, cube the chicken into bite sized pieces and and season with salt, pepper, and paprika. If you like it a little more spicy, add some cayenne pepper and omit the paprika. Also cut the bell peppers and onions into strips, julienne style. Next, cook the chicken in a tablespoon of olive oil until brown, crispy, and done. As the chicken cooks, grab another pan and add a tablespoon of olive oil, a tablespoon of minced garlic and the bell pepper/onion mixture. Do not stir the veggie pan too often; you want them to get nice and seared for flavor.
As both of these are cooking away, pop open that can of biscuits and line a cookie sheet with parchment paper. Flatten out each biscuit to the size of a coaster. Brush these with olive oil and add about 1/4 cup of cheese. Once the chicken and veggie mixture is done, evenly distribute this on each biscuit, add a little more cheese on top and let this bake for about 15 minutes. Voila!
I added a minimalist salad as a side and it was delicious. Try adding your favorite salad dressing for dipping, rather than ketchup or barbeque sauce! ENJOY!
