S'mores inspired Ice-Cream Pie

As I was sitting at work hearing my fellow cubicle neighbor discuss the fact that she will be making dessert tonight, I got jealous. I wanted something too... but I did not want to have to buy 400thousand ingredients to make a batch of cookies or buy a pound of flour just to use half of a cup in a muffin recipe.
I also needed to clean up the house tonight, so I didn't want to make something that took a while to make. So here it what I made!

S'mores inspired ice-cream pie
Ingredients
6 mini prepared graham cracker pie crusts
chocolate ice cream
marshmallow fluff
toppings of your choice (graham cracker crumbs, chocolate syrup, chocolate chips, etc)

Directions
Take ice cream out of the freezer and let sit for about 10 to 15 minutes, until soft enough to spread. Take the mini graham cracker crusts and fill with chocolate ice cream. Put back into the freezer for, at least, 30-45 minutes. Then take back out, top with a heaping spoon of marshmallow fluff and graham cracker crumbs, chocolate syrup, chocolate chips, or any other topping of your choice.

Sure it's not the iconic S'more you grew up with as a kid, but it's an easy and really delicious spin of the old classic!
