Weekly Dinner List

Aah, it's Thursday! Thursday is my night to make a grocery list and plan out all dinners through next Thursday. I always go grocery shopping on Friday's after work and get frustrated when I do not have my weekly dinner list with me (yeah, i know!). So before I go into what's on this weeks menu, I do have to say that I am taking full advantage of the VIVA ITALIA sale at Publix, as anything "italian" is on sale this week. This will help keep the weeks grocery bill as low as possible. Also, I did not make Jambalaya last week so I will be doing so this week.

Friday
Jambalaya

Saturday
Whole Grain Pasta with Turkey Meatballs
I just adapted a standard meatball recipe to fit the taste I am looking for when using ground turkey. I mix the ground meat with an egg, regular or italian breadcrumbs (which ever one I am in the mood for), salt, pepper, parmesan cheese, milk, and parsley.
Then I sear the meatballs in a couple tablespoons of butter and then let them cook through in store bough tomato sauce. It is BOGO right now at Publix, which is awesome.

Sunday
Pizza Margherita
I am adding a salad on the side (also BOGO at Publix)

Monday
Turkey Burgers with a side salad
(YES!! we are having these again this week; in case you haven't noticed, it is one of our favorite dishes)

Tuesday
Veggie Stir-Fry with Whole Grain Rice
I bought Kikkoman stir-fry seasoning a while back, which I received for free after the coupons I had. I will serve sauteed bell peppers, onions, and broccoli over whole grain rice for this dish.

Wednesday
Lasagna
Made with ground turkey instead of ground beef.

Thursday
Sauteed Chicken Breast with wild rice and broccoli
