Weekend Tidbits!

Since last Sunday, Sean and I have been back on our healthy eating kick and shedding some pounds before our big day (no pun intended)! Our wedding is about 6 months away and I have been putting this off for way too long. It's finally time to swing my ass back into gear and be healthy.
Honestly, I have been meaning to do this all along, especially with the wedding coming up. One of the moments for me, where I told myself that it's time is when I realized that I would no longer be saying "my wedding is next year", but rather I would be saying "my wedding is this year"! Along with that was the fact that my wedding dress was ready to be picked up at Alfred Angelo's and when I tried it on again, I loved it BUT I could afford to lose some poundage, especially in the midsection. I realize that I am going to be looking at my wedding pictures for the next 60+ years and I don't want to look at them going "Man, I wish I would have shed a few".

So any who, Sean and I have been doing very well for the last week or so and, to me, the first week is one of the hardest because I am going from eating whatever the heck I want to really reading and understanding the Nutritional values of food that I put into my body. Like I said, Bumfuzzled Jane has been a huge inspiration and I take advice and tips from her on living a healthier lifestyle very seriously. 

My new favorite ingredient is probably pumpkin puree! I didn't realize how much calories it could cut if you really pay attention to what you're doing and how much good it can do for your body. Last weekend I posted about that Sweet Potato Breakfast Muffin I made and this weekend I was experimenting with different foods for another breakfast treat. Let me start off by saying that I have been inhaling the Powercakes website, particularly the 'power' recipes she has listed. Her recipes are packed full of protein and other goodies while keeping everything very clean and relatively low in calories. Needless to say, Saturday morning I decided to try her Pumpkin Powercakes. They only have three ingredients yet I seemed to have totally messed these up. Once done, I topped with berries but they were not good. Before you throw her recipe out the window, please let me tell you that I forgot one main ingredient, which would explain why I threw all of them away... I didn't add any sort of flour. Therefore, my cakes didn't really stick together and the texture was all off. Those went into the trash really quickly!

Now that I had thrown those away, I was still hungry so I decided that I would just throw whatever I thought would work together and see what happens. Well, what happened was actually really good. I threw oats, pumpkin puree, vanilla, baking powder, egg whites, almond milk, sweetener, chocolate whey protein, and pumpkin pie spice together in a blender. The result was fabulous!
 They were really filling and with a drizzle of honey they were just sweet enough to satisfy my craving.

After breakfast, Sean and I headed out to go register for our wedding. We had already done one registry at Crate & Barrel but we wanted to do one at Macy's as well because we both felt as though they had a better selection. It was super fun and we actually spent about 2 hours just roaming the aisles full of stuff that I wanted to scan! :)

I also managed to find a couple of outfits that I thought my mom could wear for the wedding (she is very indecisive and works two jobs, so I have kind of taken on this role of stylist for her lol).

 I think that she prefers the one on the far left, because it's simple, chic, classy, and very appropriate for a daytime and outside wedding. It looks white in the picture, but it's actually more of a cream color. Also, the dress on the far right was amazing. Plus, it's in this sort of minty color, which is one of my wedding colors (unless I change my mind before now and then).

We went home afterwards and I did some grocery shopping. I ended up finding these things from Publix, which are brand new and were on sale for $2 each. You just add your own lettuce and it's done. IT. WAS. DELICIOUS!


And then... It was Sunday. I just went to Target today and got some new shoes to work out in. They are quite comfy and were on sale for about $24.00. I headed to the gym afterwards and did about 25 minutes on the stationary bike. I usually prefer running but it has been so long since I've been that I decided to start out a little more slowly. I also decided to try out this new recipe that I saw on Cooking Channel, more specifically Not My Mama's Meals with Bobby Deen. They are Jalapeno Cheddar Corn Cakes. I made it exactly as the recipe stated but used almond milk instead of whole milk. Also ended up just using cooking spray in a non-stick skillet. The batter was enough for 8 corn cakes consisting of about 1/2 cup of batter each. Each Corn Cake is about 125 calories, which definitely isn't bad. I made some chicken with it, which we will be taking for lunch to work tomorrow.
