Sweet Potato Breakfast

Just like many others, one of my commitments this year is to eat better... well, make better and healthier choices, which will turn into eating better than I currently am. Last year I made a pumpkin breakfast muffin that I found on She Rocks Fitness, which was tasty, but became boring to me very quickly. Plus, the recipe stated to top with peanut butter, although you can certainly top it with anything else, which added extra calories that I really didn't want because, believe it or not, I am not much of a peanut butter fan. 

So anyways... Today I got up to make breakfast, thinking I would make the pumpkin microwave muffin again, as it was quite filling, only to realize that I had no more pumpkin. So, there I was... hungry, too lazy to go to the store, and trying so hard to not just eat something quite unhealthy that's sitting in the fridge.

I was trying to think of something to make besides regular egg whites (not really a fan of plain old eggs either) that would satisfy me for a few hours and give me the energy that I need. Then it came to me... Sweet Potatoes!

The following is a recipe for a delicious microwave "muffin" with... wait for it... only 166 calories!

Sweet Potato & Honey Microwave Muffin
Serves 2

Ingredients
  • 1 medium sized sweet potato
  • 3 tablespoons of Silk Pure Almond Milk (or any other milk you prefer)
  • 2/3 cup of egg whites
  • 2 tablespoons of favorite whey protein (I used GNC Total Lean Chocolate)
  • 1 teaspoon baking powder
  • drizzle of honey
  • couple of berries
  • Cooking spray

Directions
  1. Poke holes all over the sweet potato and place on a microwave safe plate and microwave for about 6 minutes (or until soft all the way through)
  2. Peel skin off of sweet potato and mash with almond milk - place in fridge for a few minutes to cool down
  3. In a bowl, mix egg whites with whey protein and baking powder. Add in sweet potato mixture. *Mixture will be runny* 
  4. Spray 2 large mugs with cooking spray and divide muffin mixture in half between the two mugs
  5. Microwave, one at a time, for 4 minutes then pop out onto a plate
  6. top with berries and honey
  7. Voila!


This little bad boy has a total of 166 calories, 13 grams of protein, and less than 1 gram of fat. 

It was just the right amount of sweetness to where I didn't need to add anything extra and was filling enough to sustain me for a few hours.
