Sweet Potato Boats

As I am on a new healthy eating kick, I am constantly on the lookout for new low calorie, yet hearty foods, which can be hard to find.
Anyhow, I was on Gina's Skinny Recipes, which my friend Bumfuzzled Jane showed me, and found these Loaded Turkey Santa Fe Baked Potato Skins.
They seemed hearty enough to give me the feeling of having eaten a thanksgiving dinner without all of the calories. I substituted the Russet Potatoes for Sweet Potatoes and pretty much followed the recipe to a tee. It was very good! It gave you all of the meat you crave, beans, corn, spice from a jalapeno, and creaminess from a little cheese and a dollop of sour cream. I paired this with a simple salad.
The calorie count on the website did say 76 calories per loaded skin, however I am not sure how that is possible. I guess it depends on the size of the potato also.
I am going to use the "meat" of the sweet potato for tomorrow's dinner.
