Besides saving money, I love to cook and bake. For dinner tonight, I decided to use the least-used spice in my household: Cajun seasoning! Here is what you need:
(1) Chicken Breast - cubed(1) cup of thawed medium to large sized shrimp - peeled and deveined
(1) green bell pepper - chopped or julienne
(1) can stewed tomatoes - undrained
half of a medium sized yellow onion - chopped or julienne
(1) bag of boil-in-a-bag rice
(1) tablespoon minced garlic
Salt, pepper, Cajun seasoning, thyme
Olive oil
To make this dish, cook the rice as indicated on the package. Then, simply season the chicken and shrimp with Cajun Seasoning, I would say about 1 tablespoon of seasoning for each, and cook until done in a separate pan with olive oil. Move off to the side and to the same pan, add more olive oil, garlic, bell pepper, a teaspoon of thyme and onion and cook until tender. Add the shrimp and chicken back into the pot, add the can of stewed tomatoes and the cooked rice; stir and add salt and pepper to taste. Voila!
